We have a great new Prosecco in stock but this isn’t the usual suspects kind of Prosecco. The Lemoss organic, unfiltered Prosecco is a real treat for those of you who fancy a drier style of Prosecco rather then the overly sweet Prosecco commonly found in your local supermarket.
Lemoss is made from 100% glera and produced in the traditional col fondo method. This means that unlike most mass produced Prosecco, which is fermented in large tanks and then transferred under pressure to bottle (called the Charmat method), col fondo is fermented in tank and then transferred to bottle with about 1 degree of alcohol left to ferment. This is what makes the wine frizzante as fermentation finishes in the bottle.
Since the wine finishes fermentation in bottle, the dead yeast cells, called lees, are left in the bottle and that is what gives the wine its cloudy appearance. If the winemaker decided to filter the wine, you wouldn’t have Prosecco, you’d have a dry white wine. The Lemoss is unfiltered and as they don’t want to open the bottle a second time, it keeps it’s original crown cap.
The result is a Prosecco that is fresh and nicely textured with subtle citrus and apples flavours and a long dry, mineral finish. A very refreshing wine to drink on a warm Spring or Summer day.
